I first found Elana Amsterdam's recipes on-line and loved them. I was looking for lower carb baked goods and discovered that using almond flour to bake breads, cookies and cakes enabled me to enjoy what I usually avoided. The recipes are easy to follow and most ingredients can be found at our local supermarket.

This is the best cookbook I have ever purchased.
So far, I have made muffins, carrot cake cupcakes,
chocolate cupcakes, vanilla cupcakes and three different frostings.
Everything I made has turned out really well! Everytime I
make something from this book it just disapears, everyone loves it...

I was in search of a some baking recipes for my low-carb way of life so I ordered this book. I unfortunately didn't read the 1 and 2 star reviews of this book so I was disappointed when I opened the book to find that she praises grapeseed oil and agave nectar as health foods. They are not. You are better off just using honey or brown sugar and butter. They are at your supermarket and if you get the right kind of butter it is full of CLA and won't contribute to unbalanced omega ratios.

On to the good. I used butter and Whey Low D as replacements and made some very good dark chocolate chip scones. The regular sandwich loaf is very good too. I like one thin slice toasted with cheese, bacon and egg on top for breakfast. The crackers are a hit too. It is wonderful to spread my cream cheese on something or to take to a party to dip. The cheese ones are good with a little peanut butter between them like those crackers in the snack packs.

I also used home ground blanched almonds because I don't have access to any brand but Bob's Red Mill unless I order online. My stuff turned out great.

I have many food allergies and this cookbook is a godsend. The texture of the sweets is amazing and the taste is out of this world! I brought the spicy crackers to work and my co-workers without food allergies were amazed with the flavor. We all agree they are better than the mass produced crackers at the grocery store. I agree with Elana about the texture of almond flour from Bob's Red Mill. I bought some flour from Honeyville as she suggested and have had great success. I highly recommend this cookbook! I also suggest that people on facebook look up Elana. She posts recipes there too!
